- Slice baguettes lengthwise and hollow out some of the interior crumb to create a shallow well.
- Place baguette halves cut side up on the sheet and bake for 6 minutes to dry the surface slightly.
- Meanwhile, cook ground beef in a skillet over medium heat, breaking it up, until browned and cooked through.
- Add onion and garlic and cook for 3 minutes until softened but not browned.
- Stir in tomato paste and cook for 1 minute until fragrant.
- Add diced tomatoes and vegetable broth, stir well, then simmer for 12 minutes until thick and spoonable.
- Season with oregano, salt, and pepper.
- Spoon the meat mixture into the pre baked baguette halves.
- Top evenly with mozzarella and bake for 11 minutes until melted and golden in spots.
- Sprinkle with parsley, rest 2 minutes, then serve.
