  • 2 small baguettes
  • 10.5 oz lean ground beef
  • 1 medium yellow onion finely diced
  • 2 garlic cloves minced
  • 14 oz canned diced tomatoes
  • 2 tbsp tomato paste
  • 1/2 cup vegetable broth
  • 1 tsp dried oregano
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 5.3 oz shredded mozzarella
  • 2 tbsp chopped fresh parsley

Method
 

  1. Heat oven to 392°F and line a baking sheet with parchment paper.
  2. Slice baguettes lengthwise and hollow out some of the interior crumb to create a shallow well.
  3. Place baguette halves cut side up on the sheet and bake for 6 minutes to dry the surface slightly.
  4. Meanwhile, cook ground beef in a skillet over medium heat, breaking it up, until browned and cooked through.
  5. Add onion and garlic and cook for 3 minutes until softened but not browned.
  6. Stir in tomato paste and cook for 1 minute until fragrant.
  7. Add diced tomatoes and vegetable broth, stir well, then simmer for 12 minutes until thick and spoonable.
  8. Season with oregano, salt, and pepper.
  9. Spoon the meat mixture into the pre baked baguette halves.
  10. Top evenly with mozzarella and bake for 11 minutes until melted and golden in spots.
  11. Sprinkle with parsley, rest 2 minutes, then serve.

Notes

- Salt the sauce after it simmers so you can judge concentration and avoid over salting.
- Pre baking the bread keeps the crust crisp even with a saucy filling.
- For extra browning, broil for 1 minute at the end and watch closely.
