Method
- Heat oven to 400°F. Lightly grease a 9 x 13 inch baking dish.
- Bring a pot of salted water to a boil. Cook tortellini until they float, 2 minutes. Drain well.
- Heat olive oil in a skillet over medium heat. Cook onion until translucent, 4 minutes. Add garlic and cook 30 seconds.
- Stir in oregano and dried basil for 15 seconds. Add crushed tomatoes, salt, and pepper. Simmer gently until slightly thickened, 5 minutes.
- Add tortellini to the baking dish. Scatter cherry tomatoes over top. Pour sauce over and toss to coat evenly.
- Layer mozzarella slices on top and sprinkle with Parmesan.
- Bake on the middle rack until cheese melts and develops golden spots, 20 minutes.
- Rest 5 minutes, garnish with fresh basil, and serve hot.
Notes
- Do not salt the sauce heavily before baking; Parmesan and mozzarella add plenty of salt.
- Let the bake rest 5 minutes so the sauce thickens and slices cleanly.
- For a heartier version, stir in 3.5 oz diced beef halal beef sausage slices or halal turkey strips before baking.
- If the top needs more color, broil 2 minutes at the end.
