Tortellini Bake with Tomato and Mozzarella

  • 1 tbsp olive oil
  • 1 medium yellow onion finely diced
  • 2 garlic cloves pressed
  • 1 tsp dried oregano
  • 1/2 tsp dried basil
  • 14 oz crushed tomatoes
  • 18 oz fresh tortellini cheese-filled
  • 7 oz cherry tomatoes halved
  • 7 oz fresh mozzarella sliced
  • 1.8 oz grated Parmesan cheese
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • fresh basil leaves for garnish

Method
 

  1. Heat oven to 400°F. Lightly grease a 9 x 13 inch baking dish.
  2. Bring a pot of salted water to a boil. Cook tortellini until they float, 2 minutes. Drain well.
  3. Heat olive oil in a skillet over medium heat. Cook onion until translucent, 4 minutes. Add garlic and cook 30 seconds.
  4. Stir in oregano and dried basil for 15 seconds. Add crushed tomatoes, salt, and pepper. Simmer gently until slightly thickened, 5 minutes.
  5. Add tortellini to the baking dish. Scatter cherry tomatoes over top. Pour sauce over and toss to coat evenly.
  6. Layer mozzarella slices on top and sprinkle with Parmesan.
  7. Bake on the middle rack until cheese melts and develops golden spots, 20 minutes.
  8. Rest 5 minutes, garnish with fresh basil, and serve hot.

Notes

- Do not salt the sauce heavily before baking; Parmesan and mozzarella add plenty of salt.
- Let the bake rest 5 minutes so the sauce thickens and slices cleanly.
- For a heartier version, stir in 3.5 oz diced beef halal beef sausage slices or halal turkey strips before baking.
- If the top needs more color, broil 2 minutes at the end.
