  • 14 oz chicken breast cut into thin strips
  • 7 oz shredded mozzarella
  • 4 large flour tortillas
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp kosher salt
  • 1/4 tsp black pepper
  • 2 tsp olive oil for brushing

Method
 

  1. Cut the chicken breast into thin, even strips.
  2. Toss chicken with paprika, garlic powder, salt, and black pepper; rest 5 minutes.
  3. Lay out tortillas; sprinkle a thin layer of mozzarella on each, add the seasoned chicken, then top with remaining mozzarella.
  4. Fold in the sides of each tortilla, then roll up tightly from the bottom to seal.
  5. Brush the outside of each wrap lightly with olive oil, focusing on the seam side.
  6. Preheat the air fryer to 375 F.
  7. Place wraps seam side down in the basket with space between them; cook 6 minutes.
  8. Flip wraps and cook 6 minutes more, until deeply golden and crisp and the chicken is cooked through.
  9. Rest 2 minutes, then slice on a diagonal and serve.

Notes

- Cook in batches if needed so the wraps crisp instead of steaming.
- For extra sealing, place seam side down first and press lightly when you set it in the basket.
- Make ahead: prep chicken and cheese separately, assemble right before cooking to keep the tortilla crisp.
- Brighten flavors right before serving with a squeeze of lemon or a few drops of vinegar.
