- Bring a large pot of salted water to a boil. Cook pasta until al dente, then reserve 1/2 cup pasta water and drain.
- Heat olive oil in a large skillet over medium heat. Add onion and cook 3 minutes until softened.
- Add garlic and cook 1 minute until fragrant.
- Stir in crushed tomatoes, Italian seasoning, red pepper flakes, salt, and black pepper. Simmer 9 minutes, stirring occasionally, until slightly thickened.
- Reduce heat to low. Stir in heavy cream and simmer 2 minutes.
- Add Parmesan and stir until melted and smooth.
- Add cooked pasta and toss to coat. Stir in reserved pasta water as needed to loosen the sauce.
- Remove from heat, top with basil or parsley, and serve immediately.

- Keep heat low when adding cream and Parmesan to prevent curdling and clumping.
